Ingredients
- 2 c Flour
- 3/4 tsp Baking Powder
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 tsp Ground Cinnamon
- 3/4 c Sugar
- 1 c Buttermilk
- 5 tbsp Vegetable Oil
- 1 Eggs
- 3/4 tsp Vanilla
- 1/2 tsp Almond Extract
- 1 1/2 c Peaches, peeled and diced
- 2 tbsp Brown Sugar, for sprinkling
Position a rack in the lower third of the oven. Preheat the oven to 350°F. Lightly spray 12 large muffin cups or line them with paper muffin cups.
In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and granulated sugar.
In another bowl, whisk together the buttermilk, oil, egg, vanilla, and almond extract. Pour the wet ingredients over the dry ingredients and mix just until combined. Gently fold into the peaches, using as few strokes as possible; do not overmix.
With a large spoon, scoop the batter into the prepared muffin cups, filling them about two thirds full. Sprinkle the tops with brown sugar.
Bake for 25 to 30 minutes, until the muffins are golden brown - the tops should be firm to the touch and an inserted toothpick should come out clean. Let cool for 10 minutes.
