Ingredients
- 2 Sweet Potatoes, peeled and cut into a 1/2-inch dice
- 1 tbsp Olive Oil
- 1 tsp Salt
- 6 slices Bacon
- 2 tbsp Bacon Grease
- 1 White Onion, cut into a 1/2-inch dice
- 2 Green Apples, cored and cut into a 1/2-inch dice
Preheat the oven to 400°F
Toss the sweet potatoes in olive oil and salt, then arrange on a baking sheet. Roast the sweet potatoes until they are soft but not mushy, about 10 to 15 minutes. Remove from oven and reserve.
After cooking bacon, reserve the required bacon grease. In a large sauté pan, cook the onion in the bacon grease over medium-high heat until soft, about 15 minutes. Add the apples and sauté for 3 to 4 minutes. Stir in the roasted sweet potatoes, and sauté over high heat until the sweet potatoes are cooked through and are starting to become crispy, about 7 to 8 minutes.
