Ingredients
- 1/3 c White Onion, chopped
- 1/2 tsp Salt
- 2 c Water
- 1 1/3 c Instant Mashed Potatoes
- 10 oz Broccoli, chopped
- 2 c Milk
- 2 c Swiss Cheese, shredded
- 2 c Chicken Breasts, cooked
- 2 cubes Chicken Bullion Cubes
Heat broth, onion and frozen broccoli to boiling in 3-quart saucepan. Reduce heat; cover and simmer 5 minutes, stirring occasionally.
Stir in potatoes until well blended; stir in remaining ingredients.
Heat over low heat about 5 minutes, stirring occasionally, until hot and cheese is melted.

Notes
This was pretty good. Added an extra half cup of water at the beginning, as the broccoli and onion mix was really thick and wasn't going to boil well. Used a pre-cooked chicken for simplicity, and used some very sharp white cheddar (we didn't have enough swiss cheese). We added one jalapeño to give it some spice, and also cooked it for longer - the cheese melted and the broccoli was still pretty raw (cooked for half an hour instead).
