Ingredients
- 2 1/4 c Whole Grain Oats
- 1 c Rice Krispies
- 1/4 c Cornmeal
- 1 pinch Salt
- 3/4 tsp Baking Soda
- 1/2 c Honey
- 2 tbsp Vegetable Oil
- 1 tsp Vanilla
- 1/2 c Peanut Butter
- 1 tbsp Brown Sugar
- 1 tbsp Water
- 1 c Chocolate Chips
Preheat the oven to 325° F.
In a medium bowl, mix the oats, rice krispies, cornmeal, salt, baking soda.
In a microwave safe container, mix the honey, oil, and peanut butter. Microwave for 30-45 seconds. Whisk in the brown sugar and vanilla, then add to the dry ingredients. Use a tablespoon of water to clear the remaining honey/oil mixture from the container, and add that to the dry ingredients as well. Mix well.
Let the mixture cool for a couple of minutes so the chocolate chips do not immediately start melting. After it is back to room temperature, mix in the chocolate chips.
Place parchment paper in a 9x13 pan, and add the granola mixture. Press as flat as possible with another sheet of parchment paper, then bake uncovered for 30-45 minutes.
