Breading

Halve chicken breasts. Pound as flat as possible without tearing, about 1/4" thick.

For the breading, one cup of flour was plenty for six chicken breasts. Four eggs were about right as well. Three cups of bread crumbs was more than needed, but that's about one can of bread crumbs (which means the seasonings can be added to the bread crumb canister to mix).

Coat chicken in flour mixture, then egg mixture, then breading. Refrigerate the breaded chicken for at least fifteen minutes - they can be separated on a plate or two by parchment to save fridge space, but they need to chill or the breading falls off in the hot oil.

Add a bottle of vegetable oil to an electric skillet (to about an inch or inch and a half of oil deep). Heat skillet to 360°F. Once hot, fry the chicken for 2-3 minutes, flipping once. Transfer to a wire rack over a baking sheet. Keep in a warm oven until serving.

Saves well as leftovers for sandwiches.
