Ingredients

Preheat oven to 450°F. Move an rack to the middle of the oven.

Thoroughly butter and dust two small ramekin (7-ounce corningware worked), tapping out the excess.

Combine the butter and chocolate in a glass bowl and microwave for 1 minute, then stir. Microwave in short bursts until almost melted, then stir to combine.

In a bowl, use a hand mixer to beat the egg, egg yolk, and sugar until light, thick and pale yellow.

Finish stirring the chocolate and butter together, then gradually beat into the egg mixture (being careful to not cook the eggs if the butter/chocolate is too hot). Stir in flour by hand, just until combined.

Divide evenly between the two ramekins. Transfer to a baking sheet for ease of baking, and cook for 7 to 10 minutes. Let rest for a minute or two, and then turn out onto a plate. Serve immediately.

Can optionally add 1 tbsp of a liqueur, mixed in after the chocolate has been added to the egg mixture. Orange zest can be added to the egg mixture for a chocolate orange lava cake.
