Ingredients
- 3 Bananas, very ripe, peeled
- 1/3 c Unsalted Butter, melted
- 1 tsp Baking Soda
- 1 pinch Salt
- 3/4 c Sugar, approx.
- 1 Eggs, lightly beaten
- 1 tsp Vanilla
- 1 1/2 c Flour
- 1/2 pkg Dark Chocolate Chunks
Preheat the oven to 350°F. Grease a 12-cup muffin pan with cooking spray.
In a medium bowl, mash the bananas with a fork until completely smooth. Stir in the melted butter.
Mix in the baking soda and salt, then the sugar, the beaten egg, the vanilla, then the flour.
Distribute the batter into muffin cups. Bake for 22-25 minutes or until a toothpick comes out clean.
The sugar amount can be reduced to half a cup or increased to a full cup to adjust sweetness.
Alternately, can be baked in a 4x8 loaf pan for 50-60 minutes at 350°F.
